Ingredients
3 or 4 lbs of pork spareribs.,cut up in small pieces
3 cloves of garlic chopped
1 large onion diced
1 can of whole tomatoes or fresh ones diced
1 small can of tomatoe paste
olive oil
1tsp sugar
pepper
coarse salt
fresh or dry basel leaves
oregano
parsley
parmeson cheese



Heat olive oil in large pot. cook garlic and onion till light brown,remove to small bowl.
Brown ribs in batches,till lightly brown on all sides. Transfer to warm platter. Pour tomatoes and paste in pot,add about a canfull of WARM water or more,stirring and crushing tomatoes to small pieces
Add the meat ,garlic,onion.,herbs and the sugar. Keep stirring slowly till meat is all covered in sauce,about 10 minutes .
Simmer for about an hour or so.

Transfer meat to platter ,keep warm. Pour the sauce in casserole or bowl.
Serve with your choice of pasta.I like sprinkling freshly chopped parsely and parmeson cheese

I use just about same recipie, except I pressure cook my ribs
for aprox. 10 min. at 15 lbs. easier eating ribs and makes them
seem more tasty.

I have been cooking this recipe forever..Tried different recipies.But always go back to original one
