Does anyone know of a good recipe for spatzle? I have fallen in love with German food and would love to know how to make spatzle....

I have been using this recipe for a long time and it was always a great success.

Ingredients - (Serves 4 )
· 1 cup all-purpose flour
· 1/4 cup milk (water optional)
· 2 eggs
· 1/2 teaspoon ground nutmeg
· 1 pinch freshly ground white pepper
· 1/2 teaspoon salt
· 1 gallon ( ca. 3.5 liter) hot water
· 2 tablespoons butter (no margarine!)

Directions
1. Mix together all dry ingredients (flour, salt, white pepper, and nutmeg) Beat eggs and add milk (or water). Mix until smooth.

2. Press dough through spaetzle maker, or a large holed metal grater.

3. Drop not too many at a time into hot (boiling) water. Cook 6 to 8 minutes. Drain well.

4. Add butter to spaetzle and mix well.

Sprinkle with chopped parsley (optional) . Voila! Enjoy!!

I always make speatzle I grew up with them
you have to be carfull to get the right flouer I found that only the all purpos flour is right for it make sure the water is boiling and I mix flour eggs and water" milk not as good"and salt for best taste make it so thick like chewing gum and serfe over gulash or rice

I found finished speatzle in the grocerie store in the freezer section/ don't taste the same but most of stores have a speatzle mashine in the USA just asked for it got all my kids one they loved the gulasch and speatzle and they interduced there famelie to it
and they all loved it
