Been cooking since I was 10. I saw extra virgin coconut oil at the store so I will trump my healthy eating I bought a tub. I semi deep fried some Basa and peeled shrimp in this oil and I wondered if it would make a decent gravy or sauce. I added 2 tbsps of flour and slightly browned mix. It thickened like any other roux. A little water to make it roll around the pan.
add
1 tsp ground ginger
1 tsp ground curry
1/4 tsp ground garlic(optional)
1 tsp white sugar
1/2 tsp ground chipotle chile pepper(personnel preference)
Salt to taste
add water to desired thickness. I added a touch of canned milk for the lightening.
add shrimp or and fish back in but "do share".
The interesting thing about coconut oil is that it is medium chain. so won't raise your triglycerides. Even though it is high in saturated fat.
